Buttermilk Marinated Roasted Chicken Drumsticks

When I saw the recipe at Nibble Me This for this marinade, I knew I would make it. My kids are loving drumsticks lately and I am always on the lookout for new marinade recipes. The marinade took minutes to throw together and I let the chicken marinate for 6 hours. I ended up roasting the chicken instead of grilling and it turned out terrific. The meat was tender, juicy, and flavorful and the kids and my husband gave it a thumbs up. I served these drumsticks with Green Bean Bacon Wrapped Bundles and Scalloped Potatoes. Combine the buttermilk, Greek yogurt, lime juice, sea salt, freshly cracked pepper, crushed red pepper flakes, oregano, onion powder, and minced garlic together in a large ziplock; mix until well combined. Add the drumsticks to the marinade and place them into the refrigerator for 6-8 hours.

Take the chicken drumsticks out of the refrigerator 20 minutes prior to cooking them. Preheat the oven to 425 degrees. Line a baking sheet with tin foil then coat it with cooking spray.

Remove the drumsticks from the marinade and season with sea salt and freshly cracked pepper, to taste.

Place the chicken onto the prepared baking sheet then put into the oven. Roast the chicken for 35-40 minutes, flipping them halfway through cooking. Remove from the oven and let the meat rest for 5 minutes before serving. Enjoy!

Ingredients:

3/4 cup buttermilk
1/4 cup greek yogurt
2 tbsp lime juice
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp red pepper flake
1/2 tsp dried oregano
1/2 tsp onion powder
3 cloves of garlic, minced
6 chicken drumsticks
