I had an awesome recipe I wanted to share today from one of my friends but alas, the week got away from me and I didn’t get said recipe made (next week, I promise.) I do have a good reason: my parents flew in from Illinois and I wanted to spend a couple days with them instead. So, we took off to explore a bit of California and landed in Muir Woods just north of San Francisco. I am, and forever will be, a huge proponent of the National and State Park systems. A good chunk of my childhood was spent exploring these areas with my family on vacation and the lessons I learned and the history I took in was always amazing. Muir woods is full of giant Redwoods, dating back hundreds of years- it’s hard not to stand in awe of these beautiful giants. I couldn’t have asked for a better day to spend with my parents.
So with the weather turning warmer, I thought I’d share a handful of my favorite snacks to take on the road when traveling, hiking, and exploring. Mostly I just grab and assortment of:
- Dried Fruit
- Roasted Nuts
- Vegetables (I love carrots, snap peas, and cucumbers)
- Cheese
- Hardboiled Eggs
But I’ve also been known to pack:
Spring Rolls (wrapped in a damp towel and sealed in an airtight container)
Chips and Salsa
Caramelized Cauliflower and Quinoa Salad
Zucchini Ribbon, Quinoa, Pesto Salad
Hummus
Roasted Curry Pistachios
